Comparison of 3 iPad Note-Taking Apps I've Used
I tried Notability, GoodNotes, and Samsung Notes (which I also use on iPad), using each for two months.
In terms of writing feel, GoodNotes felt the most natural, while Notability was overwhelmingly better for organizing PDFs and managing folders. Samsung Notes' biggest advantage is that it's free, but syncing was a bit unstable on iPad.
The conclusion: if you're willing to pay, go with Notability; if you want something lightweight, go with Samsung Notes. I don't think GoodNotes is worth choosing just for its writing feel.

Facts, though — when it comes to writing feel, GoodNotes is the GOAT.
I've used all three as well, and my conclusion is similar. That said, Notability developed some handwriting lag after an update, so I gave up on it and switched to GoodNotes. It's a shame, because Notability is genuinely far superior for folder management. In the end, it seems like note-taking apps come down to a trade-off between how good the handwriting feel is and how convenient they are to organize, depending on which you use more often.
