History and Growth

VIPS opened its first branch in Yeoksam-dong, Gangnam-gu, Seoul in 1997, taking its first step into the Korean dining market. At that time, steak was only available at upscale Western restaurants. VIPS pioneered a new dining category called 'family restaurant' by providing steak and various Western dishes at reasonable prices. In the early 2000s, it rapidly expanded nationwide and reached its peak, and it has continued to increase its store count, operating about 80 stores as of 2024.

Signature Menu and Salad Bar

The biggest feature of VIPS is its generous salad bar. Fresh vegetables and fruits, various dressings, as well as unlimited pasta, pizza, soup, desserts, and ice cream are provided. Main dishes include sirloin steak, tenderloin steak, and rib-eye steak, which are cooked upon order to ensure the best texture. In particular, Toowoomba pasta and garlic steak have established themselves as VIPS's signature menu items. In line with recent health trends, the brand has also strengthened its grilled vegetable and low-calorie offerings.

Business Model and Differentiation Strategy

While maintaining a popular positioning as a family restaurant, VIPS presents store interiors and menu compositions tailored to the characteristics of each region. In addition, it uses CJ Foodville's ingredient distribution network and logistics system to supply fresh ingredients reliably. To continue menu innovation and quality management, VIPS operates a chef research lab and releases seasonal limited menus to attract customers' interest.

Social Responsibility and Sustainability

As part of its eco-friendly management, VIPS has recently reduced the use of disposable plastics and runs campaigns using seasonal ingredients through win-win cooperation with local farms. It also regularly conducts meal-sharing volunteer activities for underprivileged groups, fulfilling its corporate social responsibility.

Recent Trends

From 2024 to 2025, VIPS has been attempting various changes to respond to the rapidly changing foodservice market environment. As delivery demand increased after COVID-19, VIPS strengthened its ordering system through its own delivery app and delivery platforms. Although the salad bar itself cannot be delivered, VIPS has launched easy-to-cook products such as VIPS Gourmet Kits and Home Steak so that customers can enjoy VIPS flavors at home. In addition, in 2024 some stores were remodeled to add vegan menu zones and expand beverage options, including non-alcoholic cocktails. Despite pressure from price increases, VIPS has been reorganizing its membership program and enhancing price competitiveness through strategies such as weekday lunch discounts to increase customer loyalty. It is also accelerating digital innovation by introducing an AI-based demand forecasting system to reduce ingredient waste rates and by adopting order kiosks and serving robots.
