Frozen food
Overview
Frozen food refers to food made by rapidly freezing raw food ingredients or cooked dishes at sub-zero temperatures to inhibit microbial growth and enzymatic activity, thereby preserving freshness and quality for a long time. With the development of freezing technology and the expansion of distribution networks, frozen food has become deeply embedded in daily life in various forms such as convenience meals, side dishes, desserts, and raw ingredients.

History
The origins of frozen food date back to the late 19th century. In 1876, small quantities of frozen food appeared on the market in France, and in the 1920s, Clarence Birdseye of the United States commercialized rapid freezing technology, marking the beginning of the industry in earnest. Subsequently, with the spread of refrigerators, the frozen food market grew rapidly. In South Korea, frozen dumplings and frozen pizzas began to be distributed from the 1970s, and from the 1990s onward, the expansion of home freezers and increased demand for convenience foods led to their popularization.
Freezing technology
The core of modern frozen food is rapid freezing. When food is frozen slowly, the moisture inside forms large ice crystals, which destroy cell walls and degrade texture. To prevent this, technologies such as IQF (Individually Quick Frozen), tunnel freezing, contact freezing, and cryogenic freezing are used. In particular, IQF has the advantage of rapidly freezing each food item individually, allowing consumers to take out only the amount they need. Recently, cold chain technology that minimizes temperature fluctuations during the freezing process and quality management using smart sensors have become increasingly important.
Main types
Frozen foods can be broadly divided into raw ingredient types and prepared types.
- Raw ingredient type: frozen vegetables, frozen fruits, frozen meats, frozen seafood, etc. They are rapidly frozen immediately after harvesting or catching to reduce nutrient loss.
- Prepared type: frozen dumplings, frozen pizza, frozen fried rice, frozen fried foods, frozen pasta, frozen soup, etc. They are convenience foods that can be eaten immediately after heating or cooking.
- Dessert type: frozen cakes, ice cream, frozen bakery products, etc.
Advantages and disadvantages
The advantages of frozen food are its long shelf life, convenience, and preservation of nutrients. In particular, compared to fresh food, it can be supplied stably regardless of season, and its utility is high in line with the increase in single-person households. On the other hand, the texture and taste of food may change somewhat during freezing and thawing, and long-term storage can cause freezer burn, and some products may contain excessive sodium or additives. In addition, continuous electricity consumption is required during distribution and storage, raising issues of carbon emissions and energy costs.
Distribution and storage
Frozen foods must maintain a cold chain at or below -18°C from production to consumption. Temperature management during transport, storage, and in the consumer's freezer determines quality. The shelf life varies by product, but is generally from six months to more than a year. For thawing, it is best to thaw slowly in the refrigerator, and refreezing should be avoided as it increases quality deterioration and the risk of food poisoning.
Recent trends
The frozen food market in 2024–2025 is evolving toward pursuing health and convenience simultaneously. The major trends are as follows.
- Health-oriented frozen foods: Low-sodium, low-calorie, and high-protein products, as well as gluten-free and vegan (plant-based) frozen foods, are expanding. Frozen meatballs and patties made with insect protein or alternative meat are being launched.
- Premiumization of convenience meals: Restaurant-level premium frozen foods (artisan pizza, fine dining frozen meal kits) are gaining popularity and merging with the home meal replacement (HMR) category.
- Smart distribution: IoT-based cold chain monitoring, AI demand forecasting, and frozen food delivery using autonomous delivery robots are being tested.
- Sustainability: Technologies are being developed to replace frozen food packaging with recycled materials or paper-based materials and to improve freezing energy efficiency. There is also an assessment that frozen food can contribute to reducing food waste.
- Expansion of online channels: With the development of early-morning delivery and dedicated frozen courier systems, the online purchase rate of frozen food has increased significantly.
