Instant Rice
Overview
Instant rice is a cooked rice product that is processed and packaged so that it can be distributed at room temperature, refrigerated, or frozen and heated in a microwave or with hot water in a short time to be eaten immediately. It became popular after CJ CheilJedang launched “Hetbahn” (햇반) in 1996, and driven by the increase in single-person households and the growth of the home meal replacement (HMR) market, it established itself as a representative success story of the Korean food industry. Going beyond a simple substitute food, it has expanded into various consumption contexts such as camping, outdoor activities, military supply, and institutional food service, settling as a food culture.

Definition and Classification
Instant rice is divided according to storage method into room-temperature distribution products, refrigerated products, and frozen products. Room-temperature products can be stored at room temperature for about six months to a year through high-temperature sterilization and sealed packaging, and are the most widely distributed form. Refrigerated and frozen products are mainly used for premium lines emphasizing texture and freshness. Container forms include microwave-heatable plastic containers (PET/PP), pouches, cup rice, and dry types that are eaten by opening the lid and pouring in hot water. Cooking methods include microwave cooking, double boiling (placing in boiling water), and instant eating types that can be eaten immediately at room temperature without a microwave.
Manufacturing Process and Technology
The core of instant rice manufacturing is maintaining the texture of “freshly cooked rice” for a long time. The general process proceeds in the order of selecting raw rice, washing and soaking, dehydrating, high-temperature and high-pressure cooking, filling into containers, nitrogen replacement and sealing, high-temperature sterilization (retort or steam sterilization), cooling, inspection, and packaging. In the cooking stage, moisture is controlled to penetrate evenly into the inside of the rice grains, and during sealing, oxygen is replaced with nitrogen to suppress oxidation and discoloration. Precisely controlling sterilization temperature and time so that the rice grains do not become mushy while microorganisms are killed is a technical challenge. Recently, products that bring out the elasticity and gloss of rice grains through pressure control technology, coated containers, moisture redistribution technology, etc. are increasing.
History and Development
In Korea, instant rice became fully commercialized after the launch of Hetbahn in 1996. Initially, there was strong resistance to the idea of “buying rice to eat,” but it expanded the market by emphasizing taste, convenience, hygienic packaging, and price competitiveness. In the 2000s, as convenience store distribution networks expanded and the camping and leisure population increased, demand surged, and in the 2010s, sales increased greatly due to the increase in single-person and dual-income households and the expansion of at-home consumption during the COVID-19 pandemic. Afterwards, the lineup was segmented into health-oriented products such as mixed grain rice, brown rice, and konjac rice, as well as cup rice and rice bowl-type products.
Market Structure and Major Brands
In the domestic market, CJ CheilJedang's “Hetbahn” maintains a high market share, while Ottogi's “Ottogi Rice,” Dongwon F&B's “Yangban,” Daesang's “Chungjungwon,” and convenience store private brand (PB) products compete. Distribution uses all of large marts, convenience stores, online malls, and e-commerce channels such as Coupang, and in convenience stores, it forms a core product group along with lunch boxes and gimbap. Recently, small packages, large-capacity multi-serving packages, and bundled promotional products are sold together, diversifying prices and volumes.
Consumption Characteristics and Uses
Instant rice dramatically reduces cooking time while reducing the burden of food waste and cooking failure through portioned packaging. The main consumers are people living alone, international students, soldiers, campers, hikers, and office workers working late at night, and it is also used as emergency food and disaster preparedness food. In addition, it serves as a base ingredient for secondary processing such as fried rice, porridge, and rice bowls, playing the role of a foundational product for the entire convenience food industry.
Latest Trends
The trends in the instant rice market in 2024–2025 are largely in four directions. First is the expansion of health-oriented products. Products with low sugar and low calories, and products blended with konjac, oats, mixed grains, and brown rice are increasing, and products with reduced sugar and sodium content are drawing attention. Second is the growth of frozen rice and premium lines. Frozen products that claim a texture close to freshly cooked rice and products emphasizing grains and beans are gaining popularity in online channels. Third is export expansion. Along with the K-food boom, demand for Korean instant rice has increased in the United States, Japan, Southeast Asia, Europe, etc., and entry into local distribution networks and development of localized products are underway. Fourth is packaging and sustainability. Single-material containers that are easy to recycle, paper packaging, and designs that reduce plastic use are spreading, and in production processes, energy efficiency and carbon emission reduction have emerged as major tasks. Along with this, expansion into adjacent categories such as customized products for the elderly and patients (softened food) and convenient rice for pets is also active.
