Matsutake
Overview
In the narrow sense, matsutake (Korean: 송이) refers to the pine mushroom (scientific name Tricholoma matsutake), and in the broad sense it collectively refers to several related species in the family Tricholomataceae and to the group of wild mushrooms distributed as top-grade edible mushrooms in Korea and Japan. It is a representative mycorrhizal mushroom that forms ectomycorrhizae with the roots of living pine trees in a symbiotic relationship, and because artificial cultivation is nearly impossible, it depends on wild harvesting. Because of its distinctive pine-needle aroma, firm texture, and low yield, it is called the 'king of mushrooms'; in Korea, the pine forests of Gangwon-do and Gyeongsangbuk-do are regarded as representative production areas.

Classification and Morphology
Matsutake belongs to Basidiomycota, Agaricomycetes, Agaricales, and Tricholomataceae. The cap is 5–20 cm in diameter, hemispherical when young and flattening at maturity, with a surface ranging from pale yellow to brown. The stipe is thick and reaches 8–20 cm in length, with a membranous, torn ring (remnant of the partial veil) remaining on the upper part. The flesh is white and firm, and when cut it releases a strong, distinctive pine aroma. The spores leave a white print.
Ecology and Symbiosis
Matsutake forms mycorrhizae on the fine roots of plants in the genus Pinus, such as Japanese red pine (Pinus densiflora), obtaining carbon from the living tree and in return aiding the uptake of mineral nutrients such as nitrogen and phosphorus and water. The hyphae form a white mycelial layer called 'shiro (シロ, fairy ring)' in the soil, and fruiting bodies (mushrooms) develop only after this shiro has formed. It takes at least 5–10 years or more for the shiro to mature, and fruiting body development is strongly influenced by that year's temperature, precipitation, and soil moisture. As a result, harvests fluctuate greatly from year to year even in the same forest.
Harvesting and Distribution
In Korea, the main harvest season is from mid-September to late October, and representative production areas include Yangyang, Inje, and Hongcheon in Gangwon-do and Bonghwa and Uljin in Gyeongsangbuk-do. To have high commercial value, harvesting must be done before the cap fully opens, in the 'pre-opening' state. Grades range from first grade to off-grade, based on cap size, degree of cap opening, stipe length, aroma, and firmness of texture. First-grade matsutake can fetch hundreds of thousands to millions of won per kilogram at production-area prices alone, and even higher prices may be formed when exported to the Japanese market. Distribution is mostly conducted through production-area auction markets and contract transactions, and low-temperature storage and vacuum packaging are used after harvest to maintain freshness.
Nutrition and Uses
Matsutake is low in calories and rich in dietary fiber, and contains protein, amino acids, B vitamins, and minerals such as potassium and zinc. Its characteristic aroma compound, matsutakeol (a derivative of 1-octen-3-ol), is also a subject of spice and fragrance research. Cooking methods include grilling, pot rice, porridge, hot pot, frying, and sanjeok (skewered meat and vegetables), and it is common to minimize seasoning to bring out the aroma. In Korea, it has strong cultural symbolism and is used as a holiday gift, for ancestral rites, and for entertaining distinguished guests.
Cultivation and Research
Because of its mycorrhizal ecological nature, it is practically impossible to cultivate in large quantities on sawdust or media like oyster mushrooms or shiitake. Instead, research on creating 'artificial mycorrhizal forests' by inoculating pine seedlings with the fungus and transplanting them into forests has been conducted in Korea, Japan, and China, but cases that reliably lead to fruiting body development are rare. Recently, research on alternative protein and fragrance materials through mycelial culture and research to identify mycorrhiza-forming genes through genome sequencing have been active.
Economic and Cultural Significance
Matsutake is among the highest-priced forest products per unit weight, making it an important source of cash income for mountain village areas. It is treated as a representative 'non-timber forest product (NTFP)' that must take both forest conservation and the local economy into account. In Korea, festivals themed on matsutake (such as the Yangyang Songi Festival) are held, and in Japan, matsutake (松茸) has become a symbol of autumn gastronomy.
Recent Trends
As of 2024–2025, the matsutake industry is being clearly affected by climate change. With high summer temperatures and drought alternating with frequent heavy rainfall, phenomena are observed in which fruiting body development occurs earlier, or bumper harvests and crop failures diverge extremely in certain regions. The spread of pine wilt disease, which threatens the matsutake mycorrhizal forests themselves, is also a major issue. In response, the Korea Forest Service and local governments are revising matsutake production-area management guidelines and emphasizing in-forest cleanup and minimizing soil disturbance to protect the shiro. On the distribution side, as direct transactions with production areas and online auctions have expanded, price formation has become more transparent, and the adoption of traceability systems (production area, harvest date, grade) has increased. In research, along with genomic research on mycorrhiza formation, development of alternative fragrances and functional materials using cultured mycelium is being attempted. In addition, with changes in demand in Japan and China combined with a decline in gift demand in Korea, diversification into processed products (pickled matsutake, powder, oil) is underway, moving away from dependence on a single high-priced item.
